Autumn makes me think of comfort foods.  It’s because Winter is just around the corner.  So my mind starts thinking of things like:  grilled cheese & tomato soup.  One of my favorite comfort foods is Eggs With Hole In Middle.  I don’t know if that’s what it’s really called.  I just know that my Momma used to call it that.  It’s easy to make!  Be sure to always use frozen bread.  It makes it easier to cut holes and an uncooked egg won’t as easily get saturated into the bread.  At any rate, use a knife or a shotglass, and make a hole in the center of each piece of bread.  Save the cut-outs.

Lightly butter up both sides of the bread and melt some butter in the frying pan.  Set the stovetop to a Medium-High temperature.  Place bread into pan.  Drop an egg into the middle of each cut hole.  Add some salt and pepper.  It’s that easy!

When the egg that seeps out from underneath the bread turns white, turn off the stove.  Flip the bread with a spatula.  Let it cook for 30-60 seconds depending on how you like your eggs.  30 seconds will make them over-easy, which is how I like it.

  1. I learned this recipe in HS–my best friend then said they were called “Italian Eggs” but we put salsa on top… Mexican salsa? … hrms… tastes great though! 🙂


  2. Yum! I call this toad in a hole and we love it! I like to sprinkle bacon bits on top for a little extra something.

    We made it back in school years ago. We called it Adam & Eve on a Raft. Never understood why it was called that though lol.
